How to Dehydrate Garlic
What does one do with this much garlic? How do you dehydrate garlic?
I recently purchased garlic at Costco. Very affordable, but there was way more than I would use in a couple of weeks.
I decided to dehydrate it.
It was a team effort to do this.
First we had to break open the garlic cloves.
A great purchase. Just roll the garlic clove around and it peels it for you!
Then you slice it on this mini mandolin.
Spread it out on the dehydrator tray.
Did you know garlic was sticky?
I lost track of how long it was on there. I put my Excalibur on the vegetable setting. I know it was at least 12 hours though.
Finished product.
Seems like there isn’t much there. I always feel that way with my dehydrated veggies too.

how’d the house smell? when i do onions, the clothes in my dresser smell of onion 😉

To pack in jars – anything special except for sterile clean jars?
Then to store – cool dry place?
I haven’t purchased an Excilabur yet….so tempting for my large garden!
Excellent question!! I Vacuum sealed a mason jar and store in my pantry. Love my Excalibur! I have tried the round style, and the Excalibur is so much nicer!
look for food grade oxygen absorbs they will permit you to store dried foods for a long time. If I have lots of stuff that I dry I get a small 5lb bottle of nitrogen that I give a squirt into the jar just before closing. No worries, nitrogen is a natural non oxidizing inert gas and every time you open a bag of food that is commercially packaged (dry)it has some in it to keep the food fresh. Nitrogen is part of our air and you breath it in every day it is not harmful but prevents food from getting bad by binding oxygen and moisture.
We also have a small electric coffee grinder.After dehydrating we ground some for coarse ground garlic .That way we have both .

I want to do this! I am just worried about the sheets/screens of my Excalibur. Were you able to get the smell out?
Angela…I wondered about that myself. I read somewhere that for either onions or garlic, dehydrate a few potatoes after the offensive item and it removes the smell! Haven’t tried it, but it sounds logical to me 🙂 Thanks for sharing MamaKautz!

I dried garlic last year and it is so brittle I can hardly grind it down to use. It doesn’t even soften up when left in olive oil. What is the texture I should be looking for to know it has dried enough? What I have is basically not usable.
